A blend of 90% Chenin Blanc, 5% Cabernet Franc, 5% Chardonnay.
This wine has superb minerality on the nose, with citrus zest and aromatic herbs coming through. It is dry on the palate with a crisp-apple acidity. In addition to this, there is a mix of pebble minerality, with citrusy lemon.
The wine is made in the traditional method, taking an average of 12 months. It’s first fermentation is in old oak barrels, with a second in bottle. There is no dosage, resulting in this fresh dry sparking. Perfect as an aperitif or with a fish course.
